Cooking For One: Quick Lemon Pepper Shrimp

Looking for a quick and easy dinner to make for yourself? This recipe is one of my favorite go to meals when I just don't feel like throwing a big meal together, but yet still want something tasty and warm.

- Bag of frozen shrimp (I'm using 60/80 size, you can use your favorite)
- 1 ½  tbsp Lemon Pepper seasoning
- 1 tbsp Parsley flakes
- 1 tbsp Butter / Margarine 
- Pinch of Salt

 1. Measure out the amount of shrimp you wish to cook. This of course is totally up to you, and how hungry you are feeling! To thaw them, place the shrimp in a large bowl filled with cold water. Let them sit for 10 minutes at room temp in the water.

2. Peel your shrimp if needed. A good idea is to have a 2nd bowl filled with cold water to place your peeled shrimp in.

3. In your skillet or pan, melt the butter down on a medium/high setting. Be sure not to let the butter burn. 

4. Once melted, add the lemon pepper seasoning and parsley flakes to the butter.

5. Drain your shrimp, and pat them dry with a paper towel. Add them into the pan and mix them through the butter and seasonings to thoroughly coat each one.

6. Add a pinch of salt while mixing the shrimp. 

7. It won't take long for the shrimp to cook, approx 5 minutes or so. They are done when they are no longer translucent, and have a reddish tint to them. 

8. Plate these lil babies up and enjoy!

Please note that you can adjust the seasoning amounts to your own liking. You can serve these with a side of rice, pasta, or veggies. In most cases you should have enough shrimp left over to make this meal again!
