Diet Diaries #2 | Meal Planning Begins

Ahh week 2 of the journey is in the history books! This week I am working to plan meals ahead, and create a better portion size. Today I made a homemade lasagna using ground beef that was cooked and drained, lasagna noodles, pasta sauce, low fat ricotta cheese, and low fat mozzarella cheese. Is this the best meal in the world? No. But is it a much better alternative to other things I used to eat? Yes. I was able to get 5 meals out of the lasagna, I ate one serving for lunch today, then split the rest into 4 containers and put them in the freezer. This week when I don't feel like making something fresh, I will have those as great meals that I made, and know exactly what went into them.

Ok enough about food and onto the weight loss. I am not sure if I mentioned this in my week 1 blog, but in addition to watching what, and how much I eat, I am also adding in exercise to my day. I am very new at exercising, and I am taking it slow. Instead of going by how many minutes I am working out, I am going for distance goals.

I have an elliptical machine here at home that I use to work out with. It works my legs, arms and im sure some other places as well. I did a total of 2 miles on the elliptical on week number one. This week I did a total of 2.5 miles. I am setting this weeks goal to a total of 3 miles.

I know for some reading this doing that many miles in a week isn't a lot, but for someone who doesn't work out at all, that is huge. I am quite proud of myself. I am getting to the point where I actually like working out, and I am making it a priority in my day. I am looking forward to summer months to come around so I can do some outdoor exercises, but for now indoor will have to do.

This weeks weigh in wasn't as impressive as last week, but weight gone is better than weight gained. I lost 2 pounds this week, making for a approx weight loss total of 8 pounds! Family members have already been commenting on my weight loss, so that is of course great.

Overall this week was good, and I am striving to make next week even better!
