I love to bake, and I have seen a couple of "healthier" recipes using cocao nibs either in addition to chocolate chips, or in replace of chocolate chips. I have also seen them being used in yogurts and granola as a topping. I had no idea what they were, so I jumped on the chance to try some!

I love chocolate, and these are chocolate in its purest, rawest form. The nibs almost look like nut pieces, and they have quite a strong bitter chocolate flavor. If you are a fan of bitter dark chocolates, then you may enjoy eating these as is. If you like the more semi sweet or milk chocolates, then I suggest baking with these along with your normal chocolate. 

I have tried these raw, and they were a bit too bitter for me, so I ended up baking with them. I added some to my chocolate chip cookie batter, and the end result gave me a nice chocolate chip cookie with a hint of a bitter, raw chocolate flavor. 

I have even seen some people mentioning that they ground up the nibs, and mixed the powder into their coffee to give a bit of flavor. Others use them as dry rub on their meats. The uses seem to be endless!
